Making soup polentina here at ‘Man Cave Mondays’ we cook whole, healthy, and hearty. We usually have chunky vegetables, but today we are mincing collard greens, carrots, onions, and garlic with cubed chicken and polenta (cornmeal).

Make your own cold weather food recipe with chicken stock. Start by boiling about 4 cups of water and add chicken or use a low sodium chicken stock. Either way you still need chicken. (Or for you vegetarians leave that meat out) When chicken is cooked after 20 minutes of boiling, cut the meat into desired size. I like cutting them into somewhat of a cube shape.

Mince collard greens or your preferred leafy vegetable such as Swiss chard or watercress.

To cook:

Now you’re making soup so use a big sauce pan or pot, add 3 to 4 tablespoons of olive oil. Place in carrots, onion, and garlic and saute in the olive oil no more than 6 minutes.Pour in the chicken stock/broth in with the carrots, garlic, and onion. Add chicken cubed and collard greens and Let boil for 5 mins.Now for the fun part. Keeping the boil active now you can Add in about 1/2 cup of polenta (cornmeal), slowly, while stirring. Continue to stir until the polenta begins to thicken, 2 to 3 minutes. Reduce the heat to low. Cover and cook until the polenta is very thick and tender, about 15 mins.

Voila! Soup for days.
