Organic veggies to be thankful for

On this Thanksgiving we should think about the veggies to be thankful for. We often times get so wrapped up in the turkey and the meats and starches, but what about our veggies? Our organic veggies provide us with soooo many delicious benefits through the thanksgiving season. 

And don’t you always feel like when it comes to the veggies you are just not sure which ones to make. Like which veggies are going to be everyones favorite? It’s always a toss up when it comes to the veggies. Of course veggie dishes are the easiest because they are usually the quickest to cook, but don’t lag on them for that reason. Take your time to make your veggies extra special. Because after all, they are taking their time to grow and be extra special for you. In fact, they are probably providing you the most benefits on your plate for thanksgiving. So lets take a minute to list some of the organic veggies and their amazing benefits to choose from when making your side dish this season: 

Sweet potato 

Sweet potatoes are a rich source of fibre as well as containing an array of vitamins and minerals including iron, calcium, selenium, and they’re a good source of most of our B vitamins and vitamin C

Collards

Collard greens are an excellent source of vitamin A, vitamin C, and calcium, a rich source of vitamin K, and a good source of iron, vitamin B-6, and magnesium. They also contain thiamin, niacin, pantothenic acid, and choline.

Broccoli 

Broccoli is a great source of vitamins K and C, a good source of folate (folic acid) and also provides potassium, fiber. Vitamin C – builds collagen, which forms body tissue and bone, and helps cuts and wounds heal. Vitamin C is a powerful antioxidant and protects the body from damaging free radicals.

Not only are green beans a nice, crunchy, low-calorie food but also they provide many key nutrients. Young, tender green beans are a good source of vitamin C, dietary fiber, folate, vitamin K and silicon (needed for healthy bones, skin, and hair)

Spinach is also an excellent source of vitamin K, vitamin A, vitamin C and folate as well as being a good source of manganese, magnesium, iron and vitamin B2. Vitamin K is important for maintaining bone health and it is difficult to find vegetables richer in vitamin K than spinach.

All types of edible mushrooms contain varying degrees of protein and fibre. They also contain B vitamins as well as a powerful antioxidant called selenium, which helps to support the immune system and prevent damage to cells and tissues.

It is crunchy, tasty, and highly nutritious. Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants ( 1 ). They also have a number of health benefits. They’re a weight-loss-friendly food and have been linked to lower cholesterol levels and improved eye health.

Aren’t these some phenomenal benefits? So maybe one of your family members has diabetes and you are doing them justice by cooking a little extra carrots or broccoli. Think about it that way! Just find a really good recipe that will make that veggie pop and you’’ll be in the money! Don’t just cook some veggies and toss them to the side this season.
