Game Day Win
It’s always a fabulous idea to stay home and lay out the goods for your boo and his buddies, however it has to be done the right way. Most game day foods make you gassy or bloated and if you are planning to drink beer then chances are you will definitely need an easy and light recipe. Here is the deal, everyone loooooves Mexican food but we all know what eating too much cheese and beans can do to your intestines, so lets be real with ourselves.
It is a game day win when you can mesh good time, good people, and healthy food together. The trick is that it can’t taste “healthy.” It has to be full of spices and herbs that give it that pop in your belly without popping out of your belly. So I usually make my veggie 7 layers bean dip. It is super easy, light and fun.
First of all you must have a bag of beans of your choice. I usually go with back beans( Cuban Style). Soak the beans for a day then boil them for eight hours. Season them to your liking.
Usually paprika, red pepper, salt, and onion do the trick for me.
After boil you should be able to mash them easily. For more of a puree style, you can throw them in the blender. Don’t forget the guacamole! Get a few avocados cut them and mash them.
Once you finish then you can add your lime, cilantro, tomatoes, onion, and a pinch of salt.
Add your homemade salsa by cutting up tomato, cilantro, onion, lime or vinegar could do the trick and top it off with a little black pepper.
Once thats done you can add your layer of sour cream which is really plain yogurt. No one has time for dairy or lactose issues so plain vegan yogurt is the best way to go. Go veggie shredded cheese is the best cheese you’ll be able to find on the shelves otherwise you can skip the cheese. Soy crumbles add to the top or bottom of your layers as needed.
Seven Layer dip is a game day win! If you make it vegan the kids will still love it and your guest will not back up your toilet! lol just saying!
