Small but filling meals
At Man Cave I stumbled up a discussion on how we usually think we’re so hungry therefore we fill our plates up to get full. But it never really works, because rather then feeling satisfied we usually feel stuffed and tired after eating. So I thought about ways to try and fix plates that would be small but filling meals.
Of course the best place to start for a great meal would be the protein. So I picked a pretty heavy protein but not an overwhelming one. That protein would be salmon. A perfect source of omega 3’s and protein. I wanted to add a carb but new that I did not want to over stuff myself so I picked the perfect cheese. Cheese is a carb that always adds a nice touch. I picked swiss cheese since it’s one of the cheeses with low sodium. I then wanted a nice vegetable that I would be able to incorporate into the meal. I didn’t want it by itself on the side. So I figured, what can be better then spinach. It’s easy to mix in and cut through.
Perfect…I’m all set! I lightly sautéed the spinach in olive oil and garlic. Then placed the salmon in the oven season in sea salt, lemon, low fat butter, and a dash of red pepper. I placed the oven on 300 degrees so it can cook slow and even. Salmon never taste good when it’s overcooked and too dry. I put the sautéed spinach at the bottom of the salmon and added two pieces of cheese after the salmon cooked for 20 minutes. Yes, you might think 2 pieces of cheese are too much but considering the fact that we didn’t add a big carb light bread, pasta, or rice we should be just fine.
Ingredients:
Swiss Cheese
Salmon
Spinach (frozen or fresh)
Olive Oil
Red pepper
Fresh Garlic
Lemon
Low fat butter
And there you have it! A nice small and filling meal. Just enough to satisfy the belly with no mistake! Muy simple 🙂
